Spontaneous fermentation with natural yeasts and maceration on the skins for 14 days.

Maturation
18 months in stainless steel.

Appearance
Intense ruby red, clear and consistent.

Bouquet
Elegant, with beautiful contrasts. Intense and harmonious with fruity, balsamic notes. Complex and fine.

Palate
Good salty minerality, persistence, elegance and finesse. Balanced thanks to the velvety, integrated tannins. Welt structured and full bodied. Ripe, red fruit, with notes of undergrowth, iodine, quinine and carob. Sweet spices.

Pairings
Red meats, game, wild boar, medium aged pecorino cheese.

Serving Temperature: 16°C.
