Winemaking
Spontaneous fermentation with natural yeasts, with maceration on the skins for 14 days.

Maturation
37 months with at least 12 months in oak barrels and 4 months in the bottle.

Appearance
Ruby red with violet hues, clear and consistent.

Bouquet
Mature nose, fine and complex, with hints of darkfruit and fresh forest floor on the finish; hints of plum and cherry, progressing with equilibrium towards balsamic and spicy notes, including blackpepper.

Palate
Rich and harmonious. Excellent on the palate, with good acidity and tannins well integrated with the alcohol to create a true balance of tastes. Lang, intense finish.

Pairings
Red meats, game and strong cheeses. Excellent with lamb.

Serving Temperature l8- 20C.
